There are so many different styles of pie crusts out there in the world, and sometimes it can make us feel a bit overwhelmed.

I’m here to show you the basic four main crusts:

  • Pate Sucree
  • Pate Brisee
  • Flaky Pie Dough (the infamous American Pie dough)

We will cover a little background for the chosen crust, the techniques you can use, how to make the dough and roll it out, what par-baking is and when you should use it, and how to create designs for your crusts.

You will leave with a recipe for your chosen crust and a filling to go along with it.

Pate Sucree

This crust is very sweet since it is full of sugar, butter, and cream. This one has a very light and crisp crust, typically used for cream or ganache pies. This will be a two-hour session with you learning how to correctly make the dough, chilling and freezing the dough, how to make the filling, and correctly baking your pie.

Pate Brisee

The French version of the American Pie crust. This crust has no sugar and is typically made for savory dishes. This crust is very flaky but softer than what American pies typically are. This crust will be baked with a filling instead of blind baking. This will be a two-hour session with you learning how to correctly make the dough, chilling and freezing the dough, how to make the filling, using your extra scraps to make designs for the top, and correctly baking your pie.

Flaky Pie Dough

Your everyday Pie crust; flaky, golden, and delicious. You can use this crust for any type of pie filling. This will be a two-hour session with you learning how to correctly make the dough, chilling and freezing the dough, how to make the filling, using your extra scraps to make designs for the top, and correctly baking your pie.


After reserving a class, I will reach out to you in the DMs with an outline of what we will be doing, the recipe for both the crust and filling and what materials you will need to make the recipe. I look forward to teaching you the basics of crust making!
