If you’re Vegan, you can skip the meat in the filling. If you are on a gluten free diet or simply don’t eat pasta, you can switch out the lasagna noodles for strips of zucchini.
I have blended ground beef (you can also substitute this for ground chicken or turkey) and ground Italian sausage with loads of fresh vegetables like spinach, zucchini, bell pepper, onion, and tomato. You can go crazy with this and add in yellow squash, jalapeno, kale, etc. if you want to! The flavor of the Italian sausage creates a true Italian base for our lasagna, but also contains a higher amount of fat which keeps our filling from becoming too dry. This dish also has a multi-cheese blend, and uses Organic Marinara sauce.
It is simply delicious, and the best part of all is that the individual roll-ups can be frozen for meal prep throughout the week! When I make it, I generally make 2-3 pans at a time and meal prep like crazy. It is great for lunches!
